Nestled in the gently undulating Preseli Hills of North Pembrokeshire is
the tiny hamlet of Rosebush. An area rich in history, reputed to have
provided the mammoth Bluestones for the inner circle of Stonehenge.
Close to the Golden Road, an ancient track that would have been a
main trade route between Wessex and Ireland when bears and wolves
still roamed the valleys, lies the quaint family-run
farm of David and Cynthia Jennings – ‘Pant
Mawr’. With breathtaking views over the
mountains across the farmland of West Wales,
towards the far tip of the Pembrokeshire Coast
National Park, the area shoulders a great sense of
legend and history laid out like an enormous
mosaic of vivid colours and textures.
It is amidst this awe-inspiring countryside, in an area that provides the
perfect climate for dairy farming, that Cheesemaking at Pant Mawr
Farm was established in 1985. David and Cynthia had returned to
Wales from the Middle East in 1983, where they had been involved in
setting up some of the first commercial dairy enterprises in Libya and
North Yemen – no mean feat! With dairying in their blood, it was only
natural to use their passion and experience to create their own
enterprise. Pant Mawr Farmhouse Cheese was born.
Starting with simple cheesemaking equipment located in one of the old
farm outbuildings, David and Cynthia set about teaching themselves
how to make cheese.  Using the milk from their own as well as other
local farms, several varieties of cheese were soon created. It was only
natural that their cheeses took their names from
the features of their surrounding landscape, names
such as Cerwyn (taken from Cwm Cerwyn, the
name of the highest peak in the Preseli
mountains), Preseli (the name of the mountain
range itself) and Graig (meaning rock). Pant Mawr
Cheeses soon achieved growing recognition, and
over the years they have won numerous awards
both in local and national competitions.
Over the years the business has grown. Whilst still located on the farm,
several more of the outbuildings have been converted for
cheesemaking, as well as the all essential maturing rooms where
cheeses are stored in perfect conditions providing the ideal
environment to develop their characteristic textures and flavours. But
one thing hasn’t changed at Pant Mawr; all cheeses are still made by
hand using those self-taught traditional techniques.
